Chicken Florentine

Recipe

  • 1lb. boneless skinless chicken (thighs or breasts)

  • 4 cups fresh spinach

  • 8 oz. frozen broccoli

  • 4 tbs. unsalted butter

  • 1 shallot sliced

  • 1 cup all purpose flour

  • 3-4 garlic cloves finely minced

  • 1 cup chicken broth

  • 1 cup whipping cream

  • salt

  • pepper

  • nutmeg

    Directions

Dredge your chicken in flour and season with salt and pepper. In a skillet add 2 tbs. unsalted butter and cook the chicken until lightly browned over medium heat 5 or 6 minutes each side. Transfer the chicken to a plate and set aside. In the same pan add 2 tbs butter and sauté the shallots and garlic until translucent scraping and deglazing the pan. Add the chicken broth and cream bringing it to a simmer. Add the chicken back to the skillet. Season with salt, pepper and ground nutmeg. Add the broccoli and spinach and cover to steam the vegetables for 10 minutes.

Serve over buttered egg noodles. Delicious!!
